Hey peeps! So today I’m gonna share with you a nice recipe for Skillet Breakfast Hash that I adapted from the Kitchen Confidence Cookbook by Kelsey Nixon (check our review!). The original recipe is from the cookbook but I changed up some things, that made it perfect for me. That’s what I really love about this recipe. You can change around anything you want to make it something that you and your family will really enjoy.
Here’s what you need:
1 package of Italian Sausage(You can get the links and take the casing off, or you can get a package of the ground Italian sausage.)
Fresh Baby Spinach
The first thing that you want to do is remove the sausage from the casing, and sort of break it up and put it in a skillet with the EVOO and brown it, breaking it up into smaller pieces as it cooks. Add a bit of salt and pepper.
While you’re waiting on your sausage to cook, you can cut your potatoes and onion and set them aside.
Once your sausage is nice and done, take it out of a skillet and put it aside on a paper towel while you do the next step.
Put the potatoes, onion, and baby spinach in the skillet with salt and pinch of chipotle pepper, and pepper, and cook until potatoes are done.
Once your potatoes are done, mix in the sausage. Then you want to make a little hole in the middle, like you would for friend rice, and add your eggs. Put the lid on the skillet and let it cook for about a minute, then mix the egg in with the rest of your stuff. Put the lid on again and cook it a couple minutes longer to make sure that the egg is done. You will literally see your runny egg start to turn white in pieces of your mixture. Season your mixture to taste (mine needed a bit of extra salt)
Once its done, add a bit of cheese and that’s it! You can also add some cheese once you serve as well.
I love this breakfast dish because its quick, easy, and super yummy! 😀
