Hey guys! Who doesn’t love mac and cheese? Hannah and I sure do! But the same old cheddar mac and cheese can get boring. So I decided to switch things up, and make mac and cheese with Arla Dofino’s Chipotle Gouda Cheese (which we were able to receive through Bzzagent) Because chipotle and cheese makes everything better. Am i right?

Chipotle Mac & Cheese with Bacon

What you need:
4 slices of thick cut bacon, cut into bite size pieces
7 tbs of unsalted butter
6 tablespoons of all-purpose flour
3 cups of 2% or whole milk (I used 2% because that’s what we had)
4 cups of Arla Dofino Chipotle Gouda cheese, shredded
1 to 2 cups of Mexican style cheese, shredded
1 pound of elbow macaroni
Salt and pepper to taste
1/2 a cup of breadcrumbs
2 tbs of parsley
Turn your oven on to 350.
Fill a big pot with hot water, and bring it to a boil
Then cut the bacon up and put it in a medium sized saucepan and cook. Once the bacon is cooked through, take it out of the pan and put on a plate with paper towels to absorb the grease, and discard the leftover grease.

Using the same pan melt the butter over medium heat. Add the flour, and whisk briskly for about two minutes to cook the flour. Then pour the milk and keep whisking to prevent lumps and until the sauce thickens enough to coat the back of a spoon, about 2 to 3 minutes. Now stir in the cheese until it’s smooth. Add salt and pepper to taste.
Some time in between doing all of this the water for the pasta should start to boil so put the pasta in and cook it according to package directions. Then drain the water.
Pour the cheese sauce into the pot you cooked the pasta in, and transfer to a casserole dish.
Mix the breadcrumbs, parsley, salt and pepper together and spread on top of the cheesy goodness. And then put the bacon on top.
Now put the dish in the oven and cook for 30 minutes to firm up. Once the time is up serve and enjoy!
