 Hey guys! So as many of you know, we get pretty busy on a day to day basis. Sara spends most of her days at college, and we both work on top of that. It get pretty crazy. Naturally we don’t always have time to fix a full and complicated meal. That’s why its nice to have something ready in your freezer like Barber Foods Stuffed Chicken Breasts to throw in the oven. It’s really easy to make, plus its a lot more filling than getting a pizza or going with a “junk food” option.

They’ve also improved their packaging design and their recipe to make it even more delicious as well as look modern. We like the new look because it helps it stand out on the shelf more, which is always a good thing.

To show you guys how easy it is to bake, and incorporate into your meals. We wanted to share our recipe for Barber Foods Stuffed Chicken & herb roasted vegetables. We love roasting vegetables this time of year because the weather is getting chillier, and its nice to have something more hearty & healthy. Plus, as our idol Ina Garten always says, roasting vegetables is one of the easiest ways to cook them, as well as bringing out all of the delicious earthy flavors. It’s also a great pairing with the Barber Foods Broccoli Chicken Breast because it incorporates veggies as well. It also tastes really great. We loved how crispy it was, and how it kept nice and tender – not dry at all.

To start your your meal you want to first preheat your oven to 375 degrees; and prepare all of your vegetables. You can add whatever veggies you want, and cut them accordingly.
Here’s what we used:
Broccoli (3 Crowns & Stalks)
1 Red Onion
1 Zucchini
16 oz package of Fresh Mushrooms
3 Vine Tomatoes
2 Garlic Cloves
Salt & Pepper (to taste)
3 Tbsp. Olive Oil
2 Sprigs of Fresh Rosemary (if you don’t have fresh you can totally use dried)
Once you have all of your vegetables cut and ready, place them on a baking sheet. Toss the oil, herbs, salt, pepper, & veggies so that the seasoning will be nice and even.
Once your oven is hot and your veggies, ready, stick the sheet in the oven to roast. Set the timer for 10 mins. You’re veggies will take longer than that, but at the 10 minute mark, you will put in your chicken.
While your veggies are roasting, prepare your raw chicken(using the instructions found on the box). To do this just take the raw chickens out of the package, remove the plastic, and stick on a baking sheet. Once your veggies get to the 10 minute mark, stick your raw chicken in the oven. Bake both your vegetables and your chicken for the remainder of the 31 minutes. After 31 minutes, stick a thermometer in the center of the chicken. Make sure it temps at 165 degrees, so that it’s fully cooked. Once you have everything finished just serve and eat!
This is such an easy and simple meal that really helps when you are having a busy week. you should never have to compromise an excellent, filling meal, for the sake of your time.
