Pumpkin Spice Sandwich Cookie Cake

Hey guys! Today we’re gonna show you all how to make a wonderful Pumpkin Spice Sandwich Cookie Cake using some simple ingredients from Kraft & The Walmart Baking Center. 

 
They have a really neat little island at our Walmart with all sorts of baking goodies all in one place. It’s really convenient because you can get pretty much everything you need for holiday baking, all right there. This is where we got a few of the things to make our cake with.

This cake is a great one to make for the fall holidays. It has all of the flavor of pumpkin & spice, plus the sweetness of the cookies & vanilla. It’s sure to be a hit at your next family gathering!
Pumpkin Spice Sandwich Cookie Cake Ingredients


Here’s what you need for the cake:

1 (18.25 ounce) package of Buttery Yellow cake mix
1 (5.9 ounce) package of Jello Pumpkin Spice Instant Pudding mix
1 tsp. Salt
1 tsp. Pumpkin Pie Spice
2 tsp. Pure Vanilla Extract
1 cup Sour Cream
1/3 cup canned Pumpkin
1 cup Vegetable Oil
4 eggs
1/2 cup Warm Water
1 cup chopped Baker’s White Chocolate
1 cup Kraft Caramel Bits
 
For the Buttercream Icing:
2 Sticks of Butter (room temperature)
1 Tbsp. Pure Vanilla Extract
1 lb. Confectioners Sugar
3-4 Tbsp very cold Milk
25 Vanilla Sandwich Cookies – Finely chopped

Pumpkin Spice Sandwich Cookie Cake Pumpkin Spice Jello

The first thing that you want to do is prepare your pans, and preheat your oven. Preheat to 350 degrees, and line the bottoms of 2 9 inch round baking pans with wax paper, once you have you wax paper on your pans, cut them in the shape of the bottom. This keeps your bottom from sticking but still keeps its form well. Grease the sides as well.

To start making your mix, combine the cake and pudding mix, salt, vanilla, pumpkin, sour cream, oil, beaten eggs, and water. Stir in your chopped Baker’s White Chocolate and Caramel Bits. Once you have everything all mixed, divide it into the two pans evenly.
Put the cakes in the oven to bake for 30 minutes, and rotate your pans half way through baking. Bake until a toothpick comes out clean, and the top is springy.
Let your cakes cool for at least 30 minutes before you take them out of your pans. This lets them get nice and settled and your cake won’t fall apart, plus it will make your icing stay well.

After your cakes are cooled, it’s time to prepare your icing!
Cream the butters in a bowl using your electric mixer. Add in the vanilla extract and mix well.

Add in the sugar, mixing well after each addition. After all the sugar is mixed in, put in your milk, 1 teaspoon at a time, mixing well until you get a nice semi thick consistency. Put in your processed vanilla sandwich cookies, and mix together.

We put ours in the food processor so it made it really fine crumbs. Then frost your cake layers. Put a generous layer in between your cake layers, then ice the whole cake. Finish with some shaved Baker’s white chocolate on top, and some processed vanilla sandwich cookies on the sides. Really, you can decorate your cake any way you wish, but we really liked the way the shaved chocolate and cookies give it a lot of extra flavor.
