Trim & Healthy Breakfast Frittata Recipe

As we all know, breakfast is the most important meal of the day. Sometimes though we find ourselves struggling to make a great wholesome breakfast, and still have it be easy to make. This frittata recipe from the Trim & Healthy Mama Cookbook we got recently has been really great for us.

If you don’t know what a frittata is, it’s basically something a quiche but without the crust. Its easily adaptable, and you can throw just about anything you want into one. It’s also kinda like making an omelette in pie form, so anything that you would put in your omelette, you can put in a frittata. We adapted ours a little from the recipe to really make it our own.

Trim & Healthy Breakfast Frittata Recipe

To make your own frittata you’re gonna need a few basic things (feel free to leave out some of the veggies or replace them with ones of your own liking)

4 slices of bacon, cut in bite size pieces.
6 eggs
1 1/2 cup shredded cheddar cheese
1/2 cup of Salsa
1/2 onion, diced
1/4 tsp salt
1 tsp. pepper
1 tsp dried parsley
6 mushrooms

The first thing to do is to cook your bacon in a skillet until its crispy. Add your onion, and mushrooms and cook until browned. Whisk your eggs, salt, pepper, parsley, and cheese together in a bowl until its combined well. After it’s all combined, pour it in the skillet.

Mix everything together in the skillet so that it’s pretty even. Cook on medium for 5-10 mins or until you start seeing the egg cooked on the edges of the skillet. Turn on the broiler on your oven while the egg is getting ready. Top with shredded cheese, and place in the oven for 3-5 minutes or until lightly browned. You want to use an oven safe skillet for this, like a cast iron one.

Remove from oven, let cool, and serve! This is super easy wholesome breakfast to prepare when you have some extra time at home. You can also make this for lunch or dinner as well.
