Cilantro Lime Fish Tacos

Springtime cooking for us is all about using the freshest ingredients to make some wonderful meals. It always seems like things are especially fresh in the spring and summer, and we can finally get local produce. Yay! We channeled some of the freshness that we love about spring into these fresh cilantro lime fish tacos! These are great to make for a lunchtime, or dinner meal, and it’s something that your whole family can enjoy.

Cilantro Lime Fish Tacos

To make your fish tacos you will need:

fresh Cod (We used 3 Fillets)
Smoked Paprika
Black Pepper
Sweet Paprika
Red Pepper Flakes
Chili Powder

For the sauce:

1/2 cup of Mayo
1 tsp. Black Pepper
1 tsp. Smoked Paprika
1/2 tsp. Chipotle Powder
1 tsp. Chili Powder
1/2 tsp. Garlic Powder

To start your fish tacos you want to first cook your cod. We cooked ours in a skillet with a bit of olive oil. Season with black pepper, sweet paprika, red pepper flakes, smoked paprika, and chili powder. Cook and season on each side until the fish is very white and starts flaking apart. 

While your fish is cooking you can start preparing your sauce. In a bowl, add 1/2 cup mayo, 1 tsp. black pepper, 1 tsp. smoked paprika, 1/2 tsp Chipotle Powder, Chili Powder and 1/2 tsp. of garlic powder. Combine all together to make your sauce. Chill in the fridge for about 10 mins.

Once your sauce is done, and your fish is too, place on a taco shell. Add fresh salsa if you like, and top with the sauce and fresh cilantro. Sprinkle Lime on top for an extra kick of flavor!
