Portuguese Inspired Codfish Stew - with Try the World

Our Portugal box contained a lot of goodies as always. This box was curated by Chef George Mendez, author of My Portugal. These are all full sized as well which it totally awesome! The items included were Piri Piri hot sauce, Olivais do Sol Olive Oil, Casa Lucena Lemon Cookies, Briosa Gourmet Codfish, RARE Pumpkin & Hazelnut Jam, Prisca Caramelized Onions with Balsamic Reduction & Port Wine, Sea Salt & Lemon by Hands on Earth, and Black Tea with Apple & Cinnamon. We love how versatile this box was. We can use a lot of the ingredients not just for making our own Portuguese inspired food, but use it on our own regular cooking as well, like the Sea Salt and Lemon Seasoning, and Piri Piri Hot Sauce. We also loved that they had something for every meal. Portuguese Inspired Codfish Stew - with Try the World

As always we loved reading the culture guide and getting to know more about Portugal, plus the items included in the box. The culture guide not only says more about the country but more about the products, if they are from a family business, organic etc. There are also several recipes included, which is great if you’re like us, and know nothing about Portuguese cuisine. This time however, we decided to branch out and make our own recipe, instead of using one of the ones provided. So we whipped together our Portuguese Inspired Codfish Stew!

What you’ll need:

1 can of cooked codfish
5 medium sized potatoes, peeled and cut into 1/4 inch slices
1 large onion, chopped
5 garlic gloves, minced
1 can of tomato sauce
A jar of Tumaca fresh tomato spread (you can substitute this for diced tomatoes!)
1 cup of water
2-3 Tsp of olive oil
6 drops of PIRI-PIRI hot sauce (or substitute 1/2 a Tsp of red pepper flakes or 6 drops of other hot sauce)
1/2 a tsp of coriander
1 Tsp of smoked paprika
1 tsp of salt

 To kick things off, use a medium to large pot and turn up the heat to medium-high to get it hot. Then peel and cut the potatoes, onions and garlic so everything is ready to go.

Heat the oil in the pot, and add the garlic and onions in, and stir frequently to avoid burning the garlic. Continue cooking for about 5 minutes or until the onion is translucent. Now add the potatoes and let those cook for about 10 minutes, to get brown and soft.

Add the tomato spread, and sauce and 1 cup of water and stir well.

To make things spicy we put in the hot sauce, coriander, paprika, and salt and stir in. Now turn the heat up and let it all cook together for 15-20 minutes, and stir frequently. But in the last 5 minutes drain, and put the cod in to break it down and get those flavors mixed together.

Ingredients
