Rainbow Cookie Truffles with Gimme Jimmy's Cookies

COOOKIES! Who doesn’t love cookies? Especially really good, tastes like homemade, cookies! They’re certainly hard to beat when you have that craving for sweets. Luckily we recently got the opportunity to check out some cookies from Gimmee Jimmy’s Cookies! Gimmee Jimmy’s Cookies is a company started by Jim Libman who always believed in delivering awesome homemade cookies. His tradition still lives on in the company today where they offer cookies and other sweets baked fresh all day, every day, to people around the world. Their cookies are also made Kosher, and have no artificial anything, which is always a great thing in our book. Not only are these cookies homemade and baked and shipped fresh, they’re also really yummy!

Rainbow Cookie Truffles with Gimme Jimmy's Cookies

We were so inspired by the cookies that we received, that we decided to make something with them! We especially loved all of the wonderful colors in the rainbow cookies that we decided to use them in a Rainbow Cookie Truffles recipe! This is a super simple recipe that you can do with any of the cookies available at Gimmee Jimmy’s, and they make the perfect little dessert to take to a party or gathering.

To get started, you’ll need a few things! (This recipe makes 12 truffles)

Gimmee Jimmy’s Cookies(6 small) You can also substitute for any other cookie
1/2 pack of softened Cream Cheese (8oz pack)
1/2 bag of White Chocolate Chips

The first step to making your truffles is to break up all of the cookies into a fine crumb mixture. You can do this by putting them in a ziploc bag and pounding them, or by throwing them into your food processor. Once you have your cookie crumbs, add the 1/2 package of cream cheese.

Combine really well until you get the texture of cookie dough, and the cream cheese is mixed evenly. Then roll your “dough” into little balls and place on a cookie sheet. After they’re all on the sheet, place them in the fridge until they harden (about 10 minutes).

Melt your chocolate chips in the microwave or in a pan, and dip your cookie balls into it, making sure it’s covered. Before the chocolate completely hardens on the cookie balls, you can add some sprinkles for some added color!

Once all of your cookie balls are dipped, you can stick them in the freezer or fridge to harden. That’s it! Once the chocolate is hardened you’re left with some delicious cookie truffles! You can even add a lollipop stick to it when you add the chocolate to make them into cake pops. Plus when you bit into them you’ll get to see the rainbow colors inside. Pretty cool, huh?
