Spinach & Pesto Mini Pizza's

Occassionally I get this weird mid week craving for pizza. I can’t explain it, but it usually ends up with me going to the local pizza place and really going to town on some fresh pizza & cheese sticks. Well, a few weeks ago I decided that instead of going out and wasting money at the pizza place, I would just make my own pizza’s at home, plus make them slightly healthier than what I would get at a restaurant. Hence the Spinach & Pesto Mini Pizza’s were born! I decided to make these with large bagels from the local Sam’s Club bakery. I absolutely LOVE their Everything Bagels, and they turned out perfect for this recipe. Plus I love that you can get your family involved in this dish, by having your kids help you make them, or have your family members customize their own bagel.

Spinach & Pesto Mini Pizza's

To make this pizza you’ll need:

Everything Bagels
Pesto
Mozzarella Cheese (shredded)
Tomatoes (I love the Flavor Bomb ones)
Fresh Spinach
Italian Seasoning Blend (like this one from McCormick)

Spinach & Pesto Mini Pizza's

First you get out a cookie sheet, and split the bagels and put them on the sheet. Then spread your pesto onto the bagel sides. You can put as much or as little as you want. I love pesto so I really used a generous amount. Then top with some shredded mozzarella cheese. Slice some small tomatoes in half and put on the pizza, along with a few leaves of fresh spinach. Lastly sprinkle on some italian seasoning.

Place your bagels in the oven on 400 degrees for about 10 min, or until cheese is melted and spinach is shriveled a bit. That’s all! It’s super simple and easy to do. Plus they’re very filling, and MUCH better than ones from the pizza place!
