Low Carb Breakfast Tacos

Breakfast is one of the most important meals of the day. Pretty much everyone knows this. Yet I know we all find it hard to have a filling breakfast sometimes. More often than not we tend to grab something quickly on our way out the door, which is not so great for us. Since we are the worst culprits when it comes to not getting a good breakfast (or skipping it all together) we decided to use this months Degustabox to make some delicious gluten free breakfast tacos!

The low carb flour tortillas that we used are from the La Tortilla Factory, which came in our monthly Degustabox. We love the size of these especially because they’re not too big, and perfect for any tacos, burritos, and dipping! We got a lot of other cool items in our box as well including some Barilla pasta & marinara, Jones Pumpkin Pie soda, and various other food items. We never know what wonderful things we’ll get to try each month. Plus we love that we can give our review of each item to brands so they know what people think!

Low Carb Breakfast Tacos

Now for the recipe. You’ll need a few things to start:

2 eggs
1/2 tsp smoked paprika (we love this one)
1/2 tsp chili powder
2 tbsp. chunky salsa
shredded cheese (preferably the taco blend)
flour tortillas (low carb)
salt & pepper

Low Carb Breakfast Tacos

You start by essentially making scrambled eggs. Combine your smoked paprika, eggs, salt, pepper, chili powder, with a bit of the shredded cheese. mix them together and put cook in a skillet on medium heat until “scrambled”. Then add some of the salsa on top and mix together. Once your egg is fully cooked, dish onto flour tortillas, top with more shredded cheese, and any other topping you wish.  Then just roll them up, and enjoy!

It’s a great breakfast that has a lot of flavor and is more filling than you would think. Plus all of the protein from the egg will keep you going for the long haul. You could also spice this up by adding some bits of sausage, or other meat in as well.
