Cornbread always seems to be a stable bread during the colder months. Theres just something about having cornbread with a bowl of chilli on a cold or snowy night thats so comforting and helps to warm you up quickly.
Because cornbread always seems to taste the same I wanted to change things up and give it something else to up your cornbread game. And of course this is easy to make. Whats also great about cornbread is you can add whatever you want to it and it always tastes great. I actually love this recipe so much I might make it for Thanksgiving, that should keep my relatives on their toes.
What you’ll need:
2 boxes of Jiffy cornbread mix (or another mix of your choice)
2 eggs
2/3 cups of whole milk
1/2 a white onion finely chopped
1/2 a lb of bacon cut into 1 inch pieces
1 Tbs of smoked paprika
A pinch of salt
1/2 Tbs of pepper
Preheat the oven at 400 degrees so its ready to go.
Heat a large cast iron skillet for 3-5 minutes then cook the bacon until its brown, and crispy. Once its cooked take the bacon out but leave a little bit of the grease in the pan to give the cornbread some more flavor.
While the bacon is cooking mix up the cornbread mix, milk, eggs, onion, paprika, salt and pepper. Once the dough is mixed up add the cooked bacon and mix well to its all throughout the bread.
Now pour the dough into the pan and bake it in the oven for 20 minutes.
And that’s it! This cornbread is so good because its sweet and smoky with the bacon and paprika added to it, and has a nice savory flavor because of the onions.
It’s perfect to eat with chilli or as a side with ribs, or with milk, which is how my dad always eats cornbread…its weird, I know. Lol
