Happy Cinco de Mayo everyone!! We are huge fans of Mexican food so we’re all about celebrating this fun holiday! Since we have so many recipes that are south of the border inspired we wanted to have a Cinco de Mayo roundup of easy and tasty recipes that you can make today or any other time!

The first dish is our Cilantro Lime Fish Tacos! These were super easy and quick to make so they’re perfect if you’re in a rush. I also love that they’re so light and healthy, but filling.

Another good dish to make is this Mexican Sweet Corn Salsa! Hannah found this recipe and it may seem a little odd when you see the ingredients but once you put everything together and let it chill in the fridge for awhile it tastes amazing!

 If you’re really feeling crazy you could make these Low Carb Breakfast Tacos for dinner! We’re big fans of breakfast for dinner. These tacos were insanely easy to make so they’re perfect if you’re feeding a crowd or just want a quick meal.

If you’re a fan of guacamole you’ll love this Fresh Summer Strawberry Guacamole! It may sound a little crazy to have strawberries and avocado together but it’s really good once you combine everything and have it in the fridge for awhile!

We made this Taco Dip awhile ago but think about it often because its so good and flavorful! Plus its super easy to make (can you see a theme with the level of easiness our recipes are. Ha) The key to this dish is just to layer everything so it looks pretty from the side. It’s also great to make ahead to let the flavors get to know each other more and party down in the dish.

 If you’re a lover of guacamole like we are this classic Guacamole Dish is perfect for you ! It’s super easy to make and is more mild.            

*Tip* To make guacamole last in the fridge use plastic wrap and press it on the guac when you’re storing it in the fridge. It makes it last for another 2 or 3 days. Another thing you can do is only make enough to eat for your meal.
