Hey there! Since summer is basically here it’s the time where grilling season is in full swing. Which means I grill almost everyday.
So for the first recipe in the series. I decided to have it be an easy one.

Okay so the first thing you will want to do is season the food of course. I will usually do this before I put it on the grill because A.) It’s better than standing over a hot grill in 80 degree weather and doing it and B) The food has more flavor because it’s sitting in the seasoning

First let’s do the chicken!
Ingredients:
2 lbs of chicken thighs (boneless & skinless)
A tablespoon of garlic and onion powder
A teaspoon of chili powder
Salt and pepper to taste
And a few drizzles of extra virgin olive oil
Throw the chicken in a bowl, throw the spices and oil in and toss

Grilled Chicken with Parmesan Corn
Now the corn.
The preparation before you grill corn is very complicated and time consuming.
Shuck it.

Now the sweet potatoes.
Ingredients:
5-6 sweet potatoes (you may want more or  less depending on how may people you’ll be feeding)
Cut the sweet potatoes in 1×1 inch slices
Salt & Pepper to taste
A tablespoon of garlic and onion powder
A few tablespoons of EVOO
It is basically the same as the chicken minus the chili powder.

Before you start to cut the sweet potatoes it’s good to go out and light the grill so it can heat up. What I usually do is light it and keep it on the highest flame. then when I out the food on the grill I turn it down all the way so the food doesn’t burn. And to not use up as much of the grill gas.
Now the first thing you want to put on the grill is the corn. It always takes the longest to cook.
Grilling corn is super easy. All you do is put is on the grill set a timer for 10 mins, once the first 10 minutes is up turn it over to the other side and set the timer for another 10 mins.

Grilled Chicken with Parmesan Corn
By the second ten minutes your cooking the corn throw the sweet potatoes on the grill & turn them every 5 minutes two times.

After all the vegetables are done it’s time to cook that bird!
Again leave the grill flame on the lowest setting.
Throw the chicken & turn every 5 minutes two times. Just like the potatoes.
I learned the hard way how to make chicken, the trick is to have the fire on low and grilling for only 10 minutes, it turns out juicy and not burnt to a crisp every time.

And now for dessert!
This is literally the lazy mans dessert but it’s still good. Honeydew!
We had a honeydew lying around so…yeah. But hey honeydew is good. Am I right?

Well that’s it for the first meal of the summer grilling series!
