Easy Cheesy Chicken & Pasta (Gluten Free)

When your living your busy life, cooking for your family might not be the easiest thing on your list. It’s easy to turn to the land of frozen dinners and boxed meals to provide your family with a wholesome meal. Using boxed meals and ingredients aren’t necessarily a bad thing in my book. Ultimately, you do what you have to do, but there is a way that you can make your boxed meals much healthier and balanced as far as nutrition. In this recipe I’m gonna show you just how easy it is to take a boxed meal and turn it into something way better (and balanced) for you, and your family. Plus. It’s gluten free!

Easy Cheesy Chicken & Pasta (Gluten Free)

I picked up a couple of boxes of Van’s Gluten Free Ultimate Cheddar Penne while at the store. It was on sale for like 75 cents, so I thought I should try it! Later, though I wanted to use the penne I bought, I didn’t want to just eat cheddar pasta with my family for dinner, so I added a few ingredients.

Here’s what you’ll need to make your recipe:

2 box Van’s Ultimate Cheddar Penne gluten free pasta
2 cups broccoli florets
3 Tbsp. Minced Garlic
8 medium portobello mushrooms sliced
Chicken seasoning
3 Chicken Breasts
salt & pepper to taste
Shredded cheese (I used an Italian Blend)
1/2 cup heavy whipping cream

First, set up your pasta water by putting water into a pan with a dash of salt. Go ahead and add your raw broccoli here as well. I do this because I don’t have to use 2 pans to make my pasta & broccoli, so basically you can kill 2 birds with 1 stone by cooking them together. Let them boil until your broccoli is a little crunchy still, but more tender.

While you broccoli and pasta water are cooking, cut up your chicken breast into small pieces. Put in a skillet with a small but of water, season with chicken seasoning and let it cook until chicken is cooked through. Set chicken aside.

By this time, you can check your pasta water. If the broccoli is crunchy but more tender, you can add your dry pasta. Let that cook until your pasta is done (your broccoli should be done by then also)

While your pasta is cooking, add your cut mushrooms and your garlic to a skillet and sautee until mushrooms are done. Remove from heat and wait for your pasta to finish cooking. Once your pasta is cooked, drain, and put in a pan with the chicken, & mushrooms.

Add Cheese sauce and heavy cream. Mix thoroughly. Then top with shredded cheese (you can mix more of this throughout as well if you want). Heat, covered, until cheese is melted. Serve!

That’s all it takes really, just adding a meat, and vegetables to your dinner to change it from something carby and not as wholesome, to something more balanced with protein and veggies.
